Greens & Beans

I have another recipe I'd like to share, though again the credit goes to the best friend for coming up with it. It makes quite a counterpoint to the mashed potato recipe, as it's a actually good for you in addition to tasting really freaking good.

1 bunch fresh kale
1 can white beans (Great Northern or Black Eyed Peas)
1 lb extra firm tofu (NOT silken)
1/3 c diced red onion
1/4 c mushroom soy sauce
1/4 c lemon juice
1/4 c olive or flax oil
garlic powder to taste

Chop the kale and mascerate in the dressing to reduce volume. Dice onion, drain and rinse the beans, and cube the tofu. Mix into the kale/dressing mixture. Serve.

The mushroom soy is fairly important, as it has quite a bit more flavor than regular soy sauce. It's darker, thicker and richer, and somewhat hard to find. Most asian grocery stores, especially those located in International Districts of large urban areas, should at least carry a "dark" soy sauce, which will work. I'd give you a brand name, but unfortunately the bottle is labelled almost entirely in a language I can't read.

The hub won't eat this because he claims the tofu has the same texture as make-up sponges. If you can't figure out when he tasted make-up sponges, I'll give you a medal, 'cause he won't tell me.
